Meet Chef Marco Bianchi

Born in Bologna, trained in Tuscany, inspired by Los Angeles.

Chef Marco brings 20 years of Italian culinary tradition to Ember, where he honors the techniques of his grandmother's kitchen while embracing the bounty of California's seasons.

'Cooking with fire connects us to something ancient,' Marco says. 'It's simple, honest, and it demands respect. That's how I approach every dish.'
